STEP – 2: - (CHOPPINGS) i. 8 – 10 Onions fine chopped ii. 2 Tomato Sliced iii. 50 GMS Ginger Paste (Adaa) iv. 50 GMS Garlic Paste (Rasoon) v. 4 Green Chillies Centre Sliced (Kancha Lanka) vi. Coriander Leaves 50 GMS Chopped (Dhania Patro). STEP – 3: - (INGREDIENTS TO MIX) i. 3 TBSP Salt ii. 2 TBSP Turmeric (Haldi Powder) iii. 2 TBSP Jeera Powder iv. 2 TBSP Cumin Powder (Dhania Powder) v. 2 TBSP Red Chilli Powder vi. 2 TBSP Kashmiri Laal Mirch Powder vii. 2 TBSP Coriander Powder viii. 2 TBSP Garam Masala Powder ix. 2 TBSP Meat Masala Powder x. 8 Nos. Cardamom (Elaichi) xi. 10 Nos. Black Pepper (Gol Moricho) xii. 8 Nos. Clove (Labang) xiii. 3 Nos. Bay Leaves (Tej Patro) xiv. 4 Nos. Red Chilli (Sukhila Lanka) xv. 3 Nos. Cinnamon (Dalchini) STEP – 4: - (MIX PROCEDURE) i. 200 ML Mustard Oil to be heated in High Flame for 10 Mins. ii. In a pan take all the chopping items except Coriander Leaves and mixed with all Ingredient’s thoroughly. iii. Add Hot Mustard Oil to the mix and left for few minutes to cool and then mixed it again. iv. Add 1 KG Mutton to it and mixed it further. STEP – 5: - (COOKING PREPARATION) i. Place Mati Handi on Gas Stove in low flame add 2 TBSP Ghee in it and make sure to stir the Ghee in base and sides of Handi. ii. At first Start Placing the Onion Masala Mix in Base. iii. Secondly the Place Mutton Fat (Charbi) and after then Mutton Pieces one by one. iv. At Top again the Onion Masala Mix with One or Two Full Raw Garlic. v. Then sealed properly with already prepared Atta Mix. STEP – 6: - (TIMINGS OF COOKING) i. After Sealing with Atta Mix left the Handi on Stove for 45 Mins. In low flame and checked for any leakage in Atta Mix seal. ii. After then take a Tawa on Gas Stove in Low Flame and Place the Mati Handi over it for another 20 Mins. iii. Open the Seal and stir it gently and check the Mutton pieces if it is not properly cooked then add little hot water in it and left it for another 15 mins without sealing it on Tawa itself. iv. After all done add already chopped Coriander Leaves (Dhania Patro) over it. v. Ready to serve and Enjoy the Home Made Mati Handi Mutton Curry Dish.
